Country French Bread with Olives & Rosemary

Ingredients: Large 2-pound (907 g) loaf
  • 1 1/2 cups (375 ml) Water, room temperature
  • 1 tablespoon (15 ml) Olive oil
  • 1 1/2 teaspoons (7.5 ml) Kosher salt
  • 1 teaspoon (5 ml) Honey
  • 1 tablespoon (15 ml) Rosemary, fresh and chopped
  • 2 1/2 cups (625 ml) Unbleached, all-purpose flour
  • 1 1/2 cups (375 ml) Whole wheat flour
  • 1⁄3 cup (75 ml) Rye flour
  • 1 1/2 teaspoons (7.5 ml) Yeast, active dry, instant or bread machine
  • 1 cup (250 ml) Kalamata olives, pitted, drained, patted dry, and halved

Medium 1.-pound (680 g) loaf
  • 1 cup (250 ml) Water, room temperature
  • 2 teaspoons (10 ml) Olive oil
  • 1 ¼ teaspoons (6 ml) Kosher salt
  • 1 teaspoon (5 ml) Honey
  • 2 teaspoons (10 ml) Rosemary, fresh and chopped
  • 2 cups (500 ml) Unbleached, all-purpose flour
  • 1 cup (250 ml) Whole wheat flour
  • 1/4 cup (60 ml) Rye flour
  • 1 1/4 teaspoons (6 ml) Yeast, active dry, instant or bread machine
  • 3/4 cup (175 ml) Kalamata olives, pitted, drained, patted dry, and halved

Small 1-pound (454 g) loaf
  • 3/4 cup (175 ml) Water, room temperature
  • 1 1/2 teaspoons (7.5 ml) Olive oil
  • 3/4 teaspoon (3.75) Kosher salt
  • 1/2 teaspoon (2.5 ml) Honey
  • 1 teaspoon (5 ml) Rosemary, fresh and chopped
  • 1 1/2 cups (375 ml) Unbleached, all-purpose flour
  • 1/2 cup (125 ml) Whole wheat flour
  • 3 tablespoons (45 ml) Rye flour
  • 1 teaspoon (5 ml) Yeast, active dry, instant or bread machine
  • 1/2 cup (125 ml) Kalamata olives, pitted, drained, patted dry, and halved

 

Instructions:

1. Put all of the ingredients (except for the olives), in the order listed, into the bread pan fitted with kneading paddle. Secure the bread pan into the Cuisinart® Bread Maker.

2. Press the PROG button to select the French program. Press Loaf Size to select size preference. Press START/STOP to begin the bread-making process.

3. When the add-in signal sounds, add the olives. If desired, when paddle signal sounds, press START/STOP to pause the unit; remove dough and kneading paddle, reshape dough and replace in bread pan. Press START/STOP to continue.

4. When the cycle is complete, remove the bread pan from the machine and transfer bread to a wire rack to cool completely before slicing.

To Prepare Using the Ultra-Fast Program (1 and 1½ pound [454 g and 680 g] loaves only)

Prepare ingredients for the 1 or 1½-pound (454 or 680 g) loaf, replacing the yeast with 1¾ teaspoons (9 ml) of rapid rise yeast for the 1-lb. (454 g) loaf, or 2½ teaspoons (13 ml) of rapid rise yeast for the 1½-lb. (680 g) loaf. Secure the bread pan into the unit and select the Ultra-Fast program. Press START/STOP to begin the bread-making process and then continue to Step 3 in recipe above.
